Our menu is based on freshwater fish because lake, river and spring waters have characterized this area for centuries. They have often opposed the activities and life of local populations but, for a long time, the fish was also the primary source of livelihood.

It seems only right to continue to offer this raw material with respect for places, tradition and environmental sustainability.
